Salad for Breakfast!

Since I became wheat free, I have really been enjoying salads for breakfast. Yes, some people do think I am bizarre, but it's great to start the day with something so fresh and nutritious.

Today's salad was made up of

A generous handful of green leaves (spinach, watercress and rocket)
About 8 baby plum tomatoes (halved)
1/2 an avocado (sliced)
A grated carrot
25g grated cheese
tbsp pumpkin seeds
tbsp sunflower seeds
tbsp cashew pieces

then I added a dressing made from

tbsp olive oil
tsp balsamic vinegar or apple cider vinegar
tsp basil pesto (wheat free)
